Greentea Risotto & Hummus Bruschetta

Green Tea Vegan Risotto

  Ingredients:

  1 cup Arborio Rice

  1 tablespoon Gunpowder Green Tea

  Somewhere between 3 and 3 1/2 cups of your favorite   vegetarian broth

  Nutritional yeast

  Salt to taste

There are two ways to make this recipe. The first is to add the Gunpowder Tea directly into the rice mix. The other is to brew one cup of green tea and replace one cup of vegetarian broth with the tea.

Traditionally with risotto you “toast” the rice; however, since we are not using oil, or aromatics, in this recipe we skip this step. Add the rice to an uncovered pot on your stovetop. Then add 1 cup of liquid. Gently stir the rice to keep it from sticking to the bottom. You don’t have to stir the rice constantly; but, you will need to watch it.GreenTrisotto01

If you choose to add the tea directly to the risotto, this is where you would do so. Be careful as some Gunpowder Teas have stems in them. These stems open up while cooking, be sure to remove all stems.

As the rice absorbs the liquid (also evaporating some of the liquid) it will get puffier and creamier. Keep adding liquid whenever risotto has reached a certain thickness.

Generally speaking, risottos come out to one cup of rice to 3 cups of liquid. This is the tricky part, just keep adding a little bit of liquid as you go along; and, keep tasting the rice. Wait until the rice is slightly translucent and puffy before tasting.

The entire process takes about 20 minutes. When it’s done, the rice should be tender to taste and the overall consistency will be like rice in a thick sauce.

Serve up the risotto; and, sprinkle on nutritional yeast to add that cheesy flavor. Salt risotto to taste.

Hummus bruschetta

  Ingredients:

  One Ezekiel English muffin

  1 to 2 tablespoons of your favorite hummus; I used balsamic hummus.

  1 to 2 fresh tomatoes, chopped

First chop up your tomatoes. Leave them on the plate so that you don’t lose any of the juices. Warm up the English muffin since they usually come frozen. Cut the muffin in half and set the interior sides down in the tomato juice. Leave to soak for a few minutes. This is to replace the oil that you would usually have on bruschetta. After the muffin ends have soaked for a bit, lift them up and add the hummus. I usually make it fairly thick almost about a quarter of an inch. Then add the chopped tomatoes on top of the hummus, pressing down a little bit so that they stay put. At this point you can run the muffin through your oven or toaster oven to give them a bit of a browning; or, you can eat them as is. A bit of fresh basil sprinkled on top makes a nice addition.

Balsamic Seared Yellow Peppers

Beautiful Potatoes, Beans, and Peppers Oh MY!

Sweet Potato and Garbanzo Bean Preparation:
-2 Cups of Steamed Sweet Potatoes, chilled
-1 Cup Cooked Garbanzo Beans, chilled, with 1/4 Cup reserved for Sauce (below)

Balsamic Seared Yellow Peppers:
-Cut in half, remove seeds and stems, and steam on high for 2 minutes.  The Peppers should still be firm and hold their bowl-like shape.
-Remove from heat and let cool
-Once cool, heat up non-stick pan to medium high
-Put several Tbsp of balsamic vinegar into pan
-Immediately (and carefully) place Yellow Peppers in pan w/inside facing down
-Move Peppers around pan surface constantly, balsamic will slowly caramelize and cook into Peppers.  Reduce heat if needed to avoid burning.  Peppers are done once the cut edges are thoroughly browned but not burned (See picture).  Chill in fridge immediately.

Potato Salad Sauce:
-1/2 Cup Soaked Almonds
-1/4 Cup Garbanzo Beans
-1/2 Cup Water
-1/8 Cup Fresh Chopped Cilantro

-1 Tbsp Nutritional Yeast
-2 Tbsp Fresh Lemon Juice
-1 tsp Fresh Chopped Garlic
-1 tsp Italian Seasoning
-1/2 tsp Curry Powder
-1/16 tsp Prepared Mustard (sodium free if possible)
-Dash Black Pepper

Blend all ingredients until smooth, adjusting amount of water to achieve dressing like texture, and then chill in fridge.

Caesar Slaw:
-2 Cups of Mixed Cabbage Greens (sliced cabbage, kale, carrots etc.)
-1 tsp Fresh Chopped Garlic
-1 tsp Balsamic Vinegar
-1 tsp Fresh Lemon Juice

Mix all ingredients thoroughly in a bowl and chill.

Toppings:
-Diced Red Peppers
-Fresh Chopped Cilantro
-Sliced Avocado

Once Sauce is chilled, carefully mix into chilled Sweet Potatoes and 3/4 Cup of Garbanzo beans in a large bowl, adding sauce as needed in order to achieve potato salad like coverage.

Carefully spoon the mixed Potato Salad into the chilled Yellow Peppers, up to any desired amount.  Place filled Yellow Pepper on a small nest of the Caesar Slaw.

Top dish with toppings (see picture)

Beautiful Tips and Tricks

Go Organic whenever possible. With all of the extra chemicals added during the production of our foods, you never know what your body could be absorbing. If for whatever reason it may not be feasible for you to invest organic fruits and veggies, try buying your exposed foods (grapes, apples, cilantro, peppers, etc.) organic and your protected foods (bananas, pineapple, cucumbers, etc.) conventional. And if that’s stretching it, invest in a good organic veggie spray. This will assist in removing chemicals that plain water may miss.

No matter your experience with organic foods, get excited and have fun! This life is about making Beautiful intentional choices. Each time you go for walk, drink more water, or buy a new food from Mother Earth’s kitchen you are investing into your Beautiful life.

Big Game Vitamin Pizzas

Hello, hello, hello!

Just in time for the “Big Game” I am dishing out the good eats; Vitamin Pizzas! If you already don’t know, I am known for my vitamin pizzas on Ezekiel Sprouted Grain Tortillas. I absolutely love them! They are loaded with protein, healthy fats, they’re tasty, and overall fun treats for the entire family. Today I am spotlighting two of my vitamin pizza recipes: Collard Green Leek Vitamin Pizza and White Cabbage Taco Vitamin Pizza.

Collard Green Leek Vitamin PizzaLeeksPizza

Ingredients:

  • Ezekiel Sprouted Grain Tortillas
  • Garbanzo Beans (low sodium)
  • Lemon
  • Garlic
  • Leeks
  • Raw or Roasted Tahini

Beautiful Garbanzo Base:

  • 1 can of low sodium organic garbanzo beans
    • Rinse and Drain
    • Place in high speed blender; or, food processor
  • 1 Lemon
    • Squeeze by hand into a bowl
    • Remove seeds
    • Add juice to garbanzos
  • 1-2 Tablespoons of Raw or Roasted Tahini
    • Add to garbanzo mixture
      • Keep an eye out for my “How to make Raw Tahini” video coming soon!
    • ¼ to ½ cup of water
      • Add to garbanzo mixture
      • Blend mixture in high speed blender or food processor for 3-5 minutes
    • This garbanzo base can stay refrigerated up to a week

Assembling the Pizza:

  1. Pre-heat oven at 375 degrees
  2. Lay flat Ezekiel Grain Sprouted Tortilla
  3. Spread 3 – 4 Tablespoons of your Beautiful Garbanzo Base
  4. Layer Garlic
  5. Layer washed and chopped Leeks
  6. Place on a cookie sheet or a glass cooking pan
    1. Remember to keep it oil free; I’ve never had a sticking problem, so you should be good to go
  7. Bake for 20 – 22 minutes (or to desired crispiness)

The best part about Vitamin Pizzas is that you can add as much as you want. Pile on the veggies, spice it up with more garlic; whatever your taste buds desire, do it! When I shop for vegetables, I buy a bunch of my favorite veggies, wash them up, and have them ready to go for random snacks and meal ideas. It’s a Beautiful feeling knowing that the foods you eat, with intention, are supporting your body from the inside-out. Next on the menu: White Cabbage Taco Vitamin Pizza.

White Cabbage Taco Vitamin Pizza VitaminTacoPizza

Ingredients:

  • Ezekiel Grain Sprouted Tortillas
  • Organic Low Sodium Tomato Paste
  • Italian Seasoning
  • Organic Sunshine BurgersLoco Chipotle with sprouted rice
  • Serrano Pepper
  • White Cabbage
  • Olives
  • Hot Sauce

Assembling the pizza:

  1. Pre-heat oven at 375 degrees
  2. Lay flat Ezekiel Grain Sprouted Tortilla
  3. Spread 3 – 4 tablespoons of tomato paste
  4. Sprinkle Italian Seasoning
  5. Defrost & Crumble Organic Sunshine Burger onto layer
  6. Sprinkle nutritional yeast
  7. Layer with Serrano pepper
  8. Wash and chop (lengthwise) White Cabbage ½ cup to 1 cup (your liking)
    1. Layer Cabbage
  9. Sprinkle more nutritional yeast
    1. More Italian seasoning
  10. Bake pizza for 20 – 22 minutes (or to desired crispiness)
    1. Also bake ¼ of a tortilla along with pizza
  11. Take pizza and the ¼ tortilla out of oven
    1. Brake the ¼ tortilla up into crisps
  12. Top pizza with olives, hot sauce, and crisps

And there you have it, two of my famous Vitamin Pizzas! I’ll continue to add more of these recipesunshineburgeryellows, so we can get creative with toppings and sauces. Keep in mind that these Vitamin Pizzas are meant to dazzle your taste buds. Organic and fresh is the best way to go when you can do it. Raw Tahini Grapefruit Cabbage Cups

cabbage4A rainbow feast for the eyes! This dish will not only be appeasing to your sight; but also, the big and tiny tummies in your family. This recipe is completely adaptable to the liking of your taste buds. If you want more carrots, pile them on. If it’s your desire to add more of a fresh taste with double the cucumber and cilantro, have at it! The addition of rice or quinoa would be perfect for added filling.

This raw dish is easy, fun, and a true delight to the wellness of your body. Your Beautiful Tahini Grapefruit Sauce is also a tasty surprise. Personally, I don’t like a lot of fat in my diet; however, this tahini grapefruit dressing contains a lot of healthy fat making it a go to treat for my weekly fat intake.

Are you ready to feel better? Super packed with vitamin C and vitamin A, your body will instantly receive a tremendous dosage of health and vitality. You can eat one as a snack or all three as a meal; either way, don’t forget to share this with family and friends.

Your Beautiful Tahini Grapefruit Sauce (Dressing)

  • 3 TBSP Pre-made Raw Tahini
    • Any brand, roasted, or make it from scratch
  • ½ a Grapefruit
    • I just use my hand to juice; make sure to remove seeds
  • Stir Together
  • 1 tsp of Water
  • Stir Until Ingredients are in a Smooth Consistency
    • It will look weird at first, but keep stirring until smooth
  • Use Right Away or Chill for Future Use
    • Use more juice/water to your liking
    • Serves 6-9 Cabbage Cups

Beautiful Cabbage Cups

  • 3 Cabbage Cups
    • Washcabbagecups2
    • Separate three leafs to hold layered salad
  • Salad Beautifully Layered
    • 2 medium Kale Leafs
      • Wash
      • Fold kale as small as you can
      • Cut thin strips lengthwise
    • ½ -1 Carrot
      • Wash
      • Peel with potato peeler to make noodles
    • ½ Cup Cilantro
      • Wash
      • Finely chopped
    • ¼ of a Cucumber
      • Wash
      • Peel off Skin
      • Use potato peeler to make noodles
    • 1 Yellow Bell Pepper
      • Wash
      • Sliced
    • 1 Broccoli
      • Wash
      • Cut along floret to make “broccoli dust”
        • Freeze the remaining stem for future use; or, juice for an extra boost in your daily juice intake
      • Drizzle Your Beautiful Tahini Grapefruit Sauce Over Salads
      • Sprinkle Sesame Seeds on Top

 The Beautiful Side Effects of:

Grapefruit – This jewel is not only fat free, but it also contains a high number of fat burning enzymes that affect insulin levels and metabolic rates. A high amount of vitamin A aids in the hydracabbagecups3tion of skin cells fighting against acne, dryness, and wrinkles. Vitamin C is also a crucial player protecting the body against free radical damage and inflammation.

Purple Cabbage – You have to love cabbage, it is your friend! High in fiber, it stimulates the digestive system keeping the pipes clear. Beautiful Lazy Chili (Oil Free Vegan)

Lazy Chili2As you all know, I love to cook from scratch! No, I’m not the best and I’m still learning; however, being a busy mom and business owner hasn’t stopped me from being a rock star in the kitchen. Below is the recipe to my beautifully delicious Lazy Chili, ENJOY!

Ingredients:

  • 1 tsp Chili Powder (or to your liking)
  • Pinch of Cayenne Pepper (or to your liking)
  • 2-4 Carrots Washed and Chopped
  • 2 Cans of Low Sodium (or Salt Free) Diced Tomatoes
  • 1 Cup of Water
  • 1 Serrano Pepper Minced
  • 1 Can of Low Sodium Pinto Beans
  • 4-8 Cups Pre-Washed, Pre-Chopped Kale
  • ½ Chopped Onion
  • 1 TBSP Garlic

Cooking Instructions:

  1. Add 3-4 TBSP of Water to Cooking Pot over Medium Heat
    1. Add Onions, Garlic, Carrots
    2. Cook for 15-20 minutes or Until Carrots are Soft
  2. Add in All Other Ingredients (Minus Kale)
    1. Cook Over Low Medium for 20 Minutes
  3. Add in Kale

Serve in bowl and store remaining chili for 4 to 5 more dinners; that is, if everyone can keep their hands off of it!

The Beautiful Side Effects of…

Pinto Beans – Don’t say yuck quite yet, pinto beans are known to be an awesome source of cholesterol-lowering fiber. This also prevents blood sugar levels from rising too fast after a meal, making it a benefit to people with insulin resistance or hypoglycemia. Pinto beans are also a great source of molybdenum, folate, protein, vitamin B1, & vitamin B6; and, minerals copper, phosphorus, iron, magnesium, manganese, and potassium.

Cayenne – This Beautiful herb has too many benefits to mention; however, I will say that this powerful spice aids with the proper function of our immune and digestive systems.   Cayenne has the ability to ease upset stomach, ulcers, sore throats, and diarrhea. It also stimulates the digestive tract, helping the body’s ability to metabolize food; and, toxins.

Kale – This king of the leafy greens is packed full of powerful antioxidants and high in iron, Vitamin K, Vitamin A, Vitamin C, & calcium. Kale is an excellent detox food filled with fiber and sulfur keeping the liver healthy and functioning properly. Let’s not forget that it is also low in calories and has zero fat; so, eat up and enjoy this anti-inflammatory beauty!

A Beautiful New Year with, Quinoa!

Quinoa Amino Acid SmoothieHappy New Year to our Beautiful foodies! The year 2015 has already begun with an enormous amount of gratitude and visions of personal triumph. With health always being in the forefront of a new year, we want to give you a great new smoothie recipe that will refresh your palate for all things Beautiful; while, spotlighting three major ingredients:

Quinoa (Kin-wah) is a super seed that is often referred to as a grain. Like rice, it is a staple food to many in South America and is becoming an essential part of many American diets due to its unique health properties. It is not only high in protein; but, it also contains essential vitamins & minerals: calcium, phosphorus & iron, in addition to the 8 essential amino acids. This is vital to providing healthy skin and hair cells that promote quick healing to damaged cells; and, protection for future growth.

Dates are a sweet fruit that can be eaten fresh or dried. This is a great winter smoothie, it is literally “Apple Pie in a cup”!!!
I love healthy food and drinks, I’m so busy being wife, mom and trainer that I don’t post as much as I would like.

Holiday HealthForce™ Apple Pie Antioxidant Extreme Pre-workout Drink

1 cup water

1 apple sliced

3 medjool dates pitted

1/2  banana

1/4 teaspoon cinnamon

1 tablespoon of HealthForce™ Purely Protein Vanilla
